What do you get when you pair wings, an air fryer, and extra time due to quarantine.? You guessed it, quaranwingz. As you all have probably or probably not have noticed from some of my recent recipes, my mom loves bulk shopping. Earlier in the summer she gave me a huge pack of chicken wings, so of course ya girl had to experiment. I have made about 6 different wing flavors during Quarantine so I wanted to go ahead and share with you all my infamous quaranwingz.

Prepping the chicken

We don’t want chicken that tastes flavorful on the outside because of the sauce, but then bland on the inside. Marinating your chicken a few hours before cooking them is key! Follow along below to see how I prep my chicken. I am Haitian so I clean my chicken a different than the typical American way. You can skip to step 6 if you want to start with seasoning the meat.

  1. In a big bowl pour about 1 cup of white vinegar, 2-3 tbsp of salt, and 1/4 cup of lemon or lime juice over the chicken. Let the chicken sit for at least 30 minutes in this mixture.
  2. Boil a large pot of water, or fill up your kettle with water
  3. When the 30 minutes are up, rinse off your chicken one by one with warm water and place it into the pot of boiling water. Make sure the stove is over.
  4. Let all the chicken sit in the hot water bath for at least 8 minutes
  5. While the chicken sits in the hot tub bath, you can get started on your seasoning.
  6. I eyeball seasoning when I cook but the seasonings I used are olive oil, paprika, salt, pepper, garlic powder, onion powder, cayenne, and a little lime juice.
  7. Place the seasoned chicken in a ziplock bag and place in the refrigerator for at least 2 hours
  8. Place the chicken in the air fryer at 450 degrees and cook until golden brow and crispy. Be sure to flip the chicken.
  9. Proceed below to the sauces

Mango Habanero

  • Add 1/2 cup cold butter to small sauce pan
  • When butter is melted add in mango habanero sauce, use as much as you need to cover your chicken (I used the one made by Buffalo Wild Wings)
  • Allow to simmer on a medium heat until thickens
  • Coat your chicken with the sauce and throw back in the air fryer for 2 minutes

Buffalo

  • Add 1/2 cup cold butter to small sauce pan
  • When butter is melted add in your favorite buffalo sauce, use as much as you need to cover your chicken
  • 1/8th tsp of garlic powder
  • 1/2 tsp cayenne
  • 3 tbsp white vinegar
  • Salt to taste
  • Allow to simmer on a medium heat until thickens
  • Coat your chicken with the sauce

Spicy Korean

  • Add 1/2 cup cold butter to small sauce pan
  • Add in 1 tbsp of fermented chili paste and mix in
  • When butter is melted add in gochujang sauce (Asian section in Publix), use as much as you need to cover your chicken
  • Allow to simmer on a medium heat for until thickens
  • Coat your chicken with the sauce, and throw back into the air fryer for 2 minutes on 450 degrees
  • Top with sesame seeds

Sweet Chilli

  • 1 tbsp Soy Sauce
  • Sweet Chili Sauce as much as you want
  • 1 Tbsp Red Pepper Flakes
  • 1/2 Tbsp Wine Vinegar
  • 1/2 Tbsp Sesame Oil
  • 2 Cloves Garlic Minced
  • 1/2 Tsp Ground Ginger
  • 1/4 Tsp Sea Salt
  • 1/2 Tbsp Lime Juice
  • 1/4 Cup Water
  • Add all in the ingredients together and bring to a boil on medium heat, bring down to a simmer when the sauce thickens
  • Coat your chicken with the sauce

Jerk

  • **Instead of using the seasonings listed in steps 1-9 season the chicken with jerk marinade (Jamaican aisle of Publix).
  • Add enough jerk marinade to coat all the chicken
  • Let the marinated chicken sit in the refrigerator for at least 2 hours
  • Air fry the jerk coated chicken at 450 degrees, you can also bake the chicken.

Sticky BBQ (Adapted this recipe from my friend Beau)

  • Add 1/2 cup cold butter to small sauce pan
  • Add in 1 cup of your favorite BBQ sauce
  • 1/4 cup of brown sugar
  • 1/4 cup of hot sauce
  • Add all in the ingredients together and bring to a boil on medium heat, bring down to a simmer when the sauce thickens
  • Coat your chicken with the sauce, place back in the air fryer at 450 for 3 minutes to get it sticky
