Teriyaki Stir Fry

I purchased tofu and string beans, realized I had some cashews and it hit me, why not make a stir fry?! I had all the ingredients to make my own teriyaki and had brown rice in the pantry. This dish was easy and delicious!

Teriyaki Stir Fry

Ingredients

  • Green beans
  • 1/4 cup of cashews
  • 1/4 cup of diced onion
  • 1 clove of garlic minced
  • 1 lime
  • 1 pack super firm tofu (use whatever protein you like)
  • String beans

Teriyaki Sauce

  • 5 Tbsp honey
  • 1/2 cup soy sauce
  • 1 tbsp brown sugar
  • 1 clove of garlic minced
  • 1 tsp red pepper flakes
  • Juice of half a lime
  • 1 tsp corn starch

Directions

  1. Steam the green beans
  2. Cook your protein, I air fryer my tofu
  3. Mix all the ingredients for the teriyaki sauce in a small bowl and set aside

Putting it all together. 

  1. Add 1 tbsp olive oil + a 1/2 tbsp of butter to medium heat pan 
  2. Add 1/4 cup of diced onions and 1 tsp of mixed garlic. Allow them to sauté for 2 minutes, stirring frequently. 
  3. Add green beans from ice water to pan and squeeze the juice from the other half of the lime and mix everything in intermittently for ~2-3 minutes 
  4. Add your cooked protein
  5. Add 1/4 cup of cashews!!! This is KEY. The crunch is soo good. (If you have salted cashews just make sure to rinse the cashews before tossing them in) 
  6. Pour in your homemade teriyaki sauce 
  7. Add 1/4 cup of water. Mix everything in and put the stove on a low-medium heat. 
  8. Allow it all to cook together but not for too long because you still want a good amount of sauce. 
  9. Serve with white or brown rice
  10. Top with sesame seeds
