
I purchased tofu and string beans, realized I had some cashews and it hit me, why not make a stir fry?! I had all the ingredients to make my own teriyaki and had brown rice in the pantry. This dish was easy and delicious!
Teriyaki Stir Fry

Ingredients
- Green beans
- 1/4 cup of cashews
- 1/4 cup of diced onion
- 1 clove of garlic minced
- 1 lime
- 1 pack super firm tofu (use whatever protein you like)
- String beans
Teriyaki Sauce
- 5 Tbsp honey
- 1/2 cup soy sauce
- 1 tbsp brown sugar
- 1 clove of garlic minced
- 1 tsp red pepper flakes
- Juice of half a lime
- 1 tsp corn starch
Directions
- Steam the green beans
- Cook your protein, I air fryer my tofu
- Mix all the ingredients for the teriyaki sauce in a small bowl and set aside
Putting it all together.
- Add 1 tbsp olive oil + a 1/2 tbsp of butter to medium heat pan
- Add 1/4 cup of diced onions and 1 tsp of mixed garlic. Allow them to sauté for 2 minutes, stirring frequently.
- Add green beans from ice water to pan and squeeze the juice from the other half of the lime and mix everything in intermittently for ~2-3 minutes
- Add your cooked protein
- Add 1/4 cup of cashews!!! This is KEY. The crunch is soo good. (If you have salted cashews just make sure to rinse the cashews before tossing them in)
- Pour in your homemade teriyaki sauce
- Add 1/4 cup of water. Mix everything in and put the stove on a low-medium heat.
- Allow it all to cook together but not for too long because you still want a good amount of sauce.
- Serve with white or brown rice
- Top with sesame seeds
